Meethe Chawal
Ingredients:
1 cup basmati rice
¾ cup sugar
2 tbsp ghee
2 cups water
8–10 cashews and almonds
1 tbsp raisins
¼ tsp cardamom powder
A few saffron strands (or yellow food color)
Instructions:
Wash and soak rice for 20 minutes. Cook rice in water until 90% done and drain.
Heat ghee in a pan and fry cashews, almonds, and raisins lightly.
Add cooked rice to the pan. Sprinkle sugar and saffron. Mix gently.
Cover and cook on low heat for 5–7 minutes until sugar melts and coats the rice.
Add cardamom powder and mix lightly.
Serve warm as a dessert.
